Lentil Sauce Pasta

Vegan Bolognese made with green lentils. A wonderful alternative to classic bolognese sauce.

Ingredients

  • 2 tbspolive oil
  • 1onion, finely chopped
  • ½ cupgreen lentils
  • ¼ cuptomato paste
  • 1杯water
  • 1/2 tspsalt
  • ½ tsp孜然
  • ½ tspblack pepper
  • ½ tspchili powder
  • 250gpasta
  • A few sprigs of parsley, minced

Instructions

  1. Heat olive oil in a sauce pan, add chopped onion and sauté until tender.
  2. Add in tomato paste and cook for 5 minutes.
  3. Add in green lentils and the spices. Pour 1 cup water.
  4. Cook until lentils are tender and remove from heat.
  5. Cook pasta according to package directions.
  6. Drain the pasta.
  7. Pour the lentil sauce over the cooked pasta.
  8. Sprinkle chopped parsley and stir.
  9. Serve it either hot as a main dish or cold as a salad.
